Workers at the Jose Cuervo distillery in the town of Tequila, Mexico split hearts of the blue agave cactus plants that are used in the making of Mexico’s iconic drink. Tequila was originally a beverage of working class men but like other liquors has undergone gentrification. It has it’s own d.o.c. designation limiting production to the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas. In the United States it is drunk in a single gulp - because in old, stereotypical western movies that's how mustachioed, pistoleros did it. Mexicans on the other hand like to sip and savour their tequila.
